Ingredients

  • 2 pounds russet potatoes, peeled and cut in 1 inch cubes
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons butter
  • 4 cups low sodium chicken or vegetable broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped chives, for topping

Steps

  1. Melt butter in a large pot over medium heat. Add onion and cook 5 minutes until soft.
  2. Stir in garlic and cook 1 minute until fragrant.
  3. Add potatoes, broth, salt, and pepper. Bring to a boil.
  4. Lower heat and simmer 18 minutes, until potatoes break apart easily with a fork.
  5. Mash lightly with a potato masher right in the pot. Leave some chunks for texture.
  6. Stir in milk and warm 2 minutes. Do not boil hard.
  7. Turn off heat. Stir in cheddar until melted. Top with chives and serve.
